Monkey Munch

Earlier this week, my niece and nephew were over for the day.  My four kiddos love playing with their cousins.  I figured that since I was alone with six little monkeys it would be appropriate for us to make some Monkey Munch!  I remember making this as a child but didn’t know what it was called.  Then I saw it on an episode of John and Kate Plus 8.  Oh well, at least that show left us with something useful and to think they used to be my inspiration, but I digress. 
Anyway, the recipe is super easy and can usually be found on the side of the box of Chex Cereal under the name Chex Muddy Buddies.  In case you can’t find it here it is.  Ingredients: 9 cups of Chex cereal ( I prefer rice chex to corn.), 1 cup semi-sweet chocolate chips, 1/2 cup peanut butter, 1/4 cup butter or margarine, 1 teaspoon vanilla, and 1 1/2 cups powdered sugar.
1. Put chex in a large bowl and set aside.  (Place some of the chex cereal in front of any toddlers you might have with you or else they will go Uhhhh, Uhhhh, Uhhhh until you do! )

2. Place chocolate chips, peanut butter and butter into a quart-sized microwavable bowl and stir together.IMG_4708
3. Microwave mixture uncovered for a minute on high.  Stir the mix again and continue to microwave in thirty minute intervals until it mixes smoothly.
4. Add the vanilla and stir.
5. Add the chocolate mixture to the Chex and stir gently.      
6. Put combination into a 2-gallon, Ziploc freezer bag.
7. Add powdered sugar, seal the bag and shake until distributed.  (This is by far the most fun step!)

8. Spread Monkey Munch out on wax paper to cool and dry.  (We usually eat it too quickly to actually do this step!)
9.  Keep refrigerated in an airtight container for storage.

I have finally made something for my boys and I hope to be able to post about it in the next day or two.  I just need to manage to get a picture of the two of them actually standing still!
